David and Shana Sicotte, graduates of the prestigious Culinary Institute of America (CIA), embarked on a culinary adventure that seamlessly blends tradition and innovation. Dave, driven by his passion for baking and pastry arts, earned a bachelor’s degree, while Shana graduated with an associate degree—together, they created a harmonious fusion of their culinary worlds.
As a husband-and-wife team, they initially dreamed of opening either a fine dining restaurant or a chocolate and dessert shop. When the opportunity arose to invest in chocolate-making equipment from a retiring chocolate maker, they embraced it wholeheartedly. During their experimentation, Dave gleaned invaluable tips and tricks, recognizing that this was their moment—their sweetest venture yet. Pooling their resources, they invested their entire life savings.
David’s curiosity led him to explore every facet of chocolate, evolving his affection into a lifelong inspiration. His professional experiences, including competing in U.S. Pastry Competitions, allowed him to truly "play" with chocolate. Shana, with her finely tuned palate, discerns the subtle notes within each cocoa bean, elevating every bar and ensuring a delightful experience for their customers.
Their journey began with chocolate-stained hands, creating their first batch—a rustic slab of promise. Roasted cacao beans and sugar, though imperfect, were infused with hope. Their daughters broke off chunks, their giggles and praise a testament to the potential they saw. David and Shana shared a knowing glance—this was it!
Early memories of Great Lakes Chocolate are filled with late nights and laughter, packing each chocolate bar by hand after their full-time jobs, accompanied by loud music to stay awake. The whole family was involved, with their kids helping pack truffles in the corner.
What sets Great Lakes Chocolate apart is their innovative use of chocolate in various confections, baked goods, and specialty desserts. Their meticulous process begins with single-origin beans sourced from different countries, each celebrated for its unique terroir. They emphasize working directly with farmers through ethical trade practices. The beans are hand-sorted, roasted to perfection, and conched until they achieve a silky texture. Each bar tells a story, connecting hardworking farmers to their cozy chocolate shop nestled in Northern Michigan.
