In the Tabasco region, this fermentary began with just one farmer, Malaquias. He has expanded and now manages not only his own farm, but the fermentation of many surrounding farms’ beans. The cacao is grown in an agroforestry system interspersed with tropical flowers, timber trees, citrus, pepper, and mangos. There is no watering infrastructure, they rely 100% on rainfall.
