El Carmen is grown by Bayardo Blandon and his family on their small farms in Central Nicaragua.  When their cacao is ripe, Bayardo and his relatives carefully harvest and aggregate the fruit so that there is enough mass to properly ferment the cacao beans, a crucial step in the development of chocolate flavor precursors.  Working closely with local partners, we’ve developed a custom drying technique that perfectly highlights the unique flavors of this cacao.
