Made with cacao from the Camino Verde farm in Balao, Ecuador, a lush growing region that is nestled between the Pacific Ocean and the Andes Mountains. This farm combines old-world Nacional cacao with innovative post-harvest techniques. The result is a flavorful, floral bouquet of orange blossom honey that is supported by a rich, chocolate foundation.
This is the one that really gets a lot of newcomers to craft chocolate on board as it has such a rich dark chocolate flavor and clean delicate finish. There is no fruit in the Balao and it is great to have an offering that steps away from the high fruit notes. The Balao starts with some delicate floral, honeysuckle, nectar, that quickly turns into a creamy, rich base that brings in warm honey comb notes. Sometimes even inching into burnt caramel, creme brulee, Toffee. These beans are naturally very low in cocoa butter, which makes for an extremely creamy mouth feel.
