Acopio, meaning "together" or "to gather" is the name of Cacao Verapaz's central fermentary and post harvest processing facility in the mountains of Central Guatemala. This cacao is grown by Maya family farmers in the mountains surrounding the Cahabón River. This area has rich soil and plenty of rain to produce high quality cacao.

Tasting Notes: This bar shares with bright notes of fresh berry and lemon that yield to turmeric and nutmeg spice. There's enough tannins to remind us of a full bodied red wine. The finish has modest astringency with the lingering notes of dried fig.
