This bright dark chocolate is made with a blend of cocoa beans from Tomé Açu and Vale do Juliana. Harper Macaw roasts the two bean varieties separately, applying roast profiles that are different than those used for the respective beans’ single estate varieties, and then combines them in the grinding process. The combination of Amazonian and Atlantic Rainforest flavor profiles provide deep complexity.
