Almendra Blanca, Mexico 77%

Almendra Blanca means “white almond,” and the color of the bean gives the finished bar a lighter brown look despite its high cacao content.  This bean has only been found in certain regions of Southern Mexico.  We source directly from Farmer Vicente on his 80-year old family farm in Tabasco, where he not only grows a variety of fruits, spices and cattle, but he also rescues and releases indigenous animals back into the jungle-plantation to maintain the balance of life.
