The Mataswalevu Farm in nestled within the hills of Northern Fiji. We love this rich and flavorful, sundried Forestero Amelonado hailing from a small microclimate, hilltop farm, which has undergone tiered, hardwood box fermentation. Farmers follow traditional methods and hand sort beans. We can feel the love that goes into producing the crop and know that you will share our gratitude after one bite. Roasting is adapted to highlight dried fruits, nuts and vanilla while simultaneously revealing caramelization, tobacco and soft leather. The Chocolate Alchemist calls this one the “poster child of why we all came to love chocolate”. Enough said.
