This cacao is sourced through Marou Chocolate based in the heart of Ho Chi Minh City, Vietnam. This cacao is grown by farmers of the Cho Gao Cooperative in the Mekong Delta in the south of Vietnam. With the help of Marou Vietnam and its fascination with terrior and fermentation, it is becoming well-known for its interesting profile of brown spice, honey, nuts and dried brown fruit. This particular cacao can take a heavy roast and loves extended time in the conch to help mellow out the acidic qualities and bring forward that unique brown spice and fruit characteristic.
