This elegant dark chocolate is made from directly traded varietal cocoa beans from northern Brazil. Tomé Açu lies in the eastern Amazon region along Rio Acará Mirim, which is located approximately 150 miles south of the mouth of the Amazon River. This terroir yields fruit-forward flavors and aromas. The cocoa beans used for the 77% Amazon Rainforest variety come from the farm of Michinori Konagano, one of the directors of Cooperativa Agricola Mixta de Tomé Açu, which was founded as a vegetable cooperative by Japanese immigrants in 1929 and today, still maintains heavy Japanese ethnic and cultural influences. Today, these diverse agroforestry plots focus not only on cacao production but also açai, Brazil nuts, guaraná, passion fruit, and peppercorn.
